haystacks

haystacks

ingredients

2 cups sugar
3 teaspoons cocoa
1/2 cup butter (cube)
1/2 cup milk
3 1/2 cup oats
1/2 cup peanut butter
1 teaspoon vanilla

directions

in a medium pot add sugar, cocoa, butter, milk
put pot on medium heat and begin stirring constantly as butter melts
bring to a boil for 30 seconds
remove pot from heat immediately, don't scorch the chocolate
add peanut butter and vanilla, stir
slowly add oats till you have perfect consistency
(too many oats will destroy these babies and make them dry)
drop by the spoonful on waxed paper
let sit for at least 30 minutes to harden
serve!

i know there are about a hundred billion "no bake" cookie recipes out there that i'm sure are all very delicious. but i decided to post this recipe on a whim for "what the heck" reasons and myself since i love these cookies so much. they are quick, easy, and bake less. which anything that tastes this good and doesn't require the oven in my hawaii-hot-studio apartment is a winner to me.

not to mention, this is our 'fly' family recipe hence we call them haystacks. i will never stray from this recipe when it comes to no bakes. so sorry peeps, no healthy alternatives here. just the good stuff. and chase and i like ours more chocolate-y, and less oat-y. but it's funny, living in hawaii i have learned to adjust to what the climate/humidity/elevation does to things here that never happens on the mainland. these guys have a hard time hardening up so we like to freeze or refrigerate ours for yummy cold cookies! lovely island treat.

and it's friday. dessert night anyone?
