ingredients
1/2 small pineapple
1/2 cup cilantro, chopped
1/4 onion, chopped (i used white but red would be better)
1 green onion, chopped
zest and juice of half a large lime
dash of salt and pepper to taste
dash of mrs. dash fiesta lime seasoning blend to taste
*if you have a small jalepeno, throw that in! i would have if i had one, but it was delicious still without
*also you can use whole pineapple but i saved half for dessert (baked pineapple with cinnamon, brown sugar, and chocolate dipped)
*thanks to all my instagram followers for giving me such good ideas for pineapple recipes! you rock!
directions
cut off both ends of the pineapple and the skin
once skinned, chop in half
chop into cubes
put in a large glass bowl
chop cilantro, onion, green onion and place in bowl with pineapple
add lime juice and zest
sprinkle with seasonings, mix well with tongs or spoon
let sit for at least one hour in the fridge so flavors combine
serve with chips or as part of your main dish!
i served the salsa over ono fish. i put butter, salt, pepper, and mrs. dash fiesta lime seasoning on the fish and baked for 12 minutes at 350 degrees. then i placed the fish on plain quinoa (i cooked half a cup) and topped with the salsa. it was awesome and added the perfect amount of flavor. enjoy!
excuse me - let me wipe my drool
