Chase and I thought it would be a fun date to go to San Diego Harbor and take a boat tour. It was beautiful seeing San Diego in a different light, from the view of a yacht :). It was a two hour tour around the harbor and taught us a lot about the history throughout the war with our naval base here. I'm so happy I didn't get motion sick and was able to enjoy our time watching the sunset on the ocean. To end the night, we took a stroll on the board walk and enjoyed some fish sandwiches at a cute cafe on the harbor. Definitely a fun date to mix things up a bit. It's so fun to actually explore your own city and see what's out there!

Like most weekends, we decided to spend this one at the beach. It becomes our Saturday tradition where we just turn the whole day into a date day :). Since Moonlight Beach is so close to our apartment it seems to be our "go to" these days. To our surprise upon arriving, there was a woody show! I've always loved these cars and whenever I see one I get so excited and just want to paint it and frame it in my living room :).
Woodies are so popular here in Southern California alongside the good ole' VW's. This is something I love about living in Encinitas. There is this laid back small town surf vibe that you can feel everywhere you go. Buildings are covered with colorful murals, local eateries are decked out with local stickers and brands, people are down to earth, healthy and active, and the beach is everyone's playground. To add these woody cars to the bunch just makes sense. They are so rad and fit the beachy lifestyle perfectly. There have been a number of times where I have been driving down the 101 and see them lining the streets for some kind of show. All I know is if I ever owned one it would definitely be sea foam with aloha print seat covers and there would be a fresh lei hanging from the mirror. Oh and don't forget to pop a few kiddos in the back and surfboards on the top! Ideal I would say :).
Cookie dough and pasta c/o: Cappello's
Anyone who knows me, knows that I enjoy cooking and especially baking. They also know that I like dabbling around with healthy alternatives. Cappello's is a rad company based out of Colorado that provides gluten free pastas and cookie dough. I decided to make a night out of it with a delicious spicy tomato and mozzarella gnocchi followed by the oh so delicious chocolate chip cookies.
The great thing about this pasta is that it cooks in under three minutes! Once they have floated to the top, they're done! They are made of almond flour and organic potato flakes. How awesome is that? The cookies are made of almond flour as well with a slight hint of coconut oil and sea salt. Sooooo delicious. All in all, it made for a great date at home and my hubby was stoked. It was super good :).
Spicy Tomato and Mozzarella Gnocchi
Ingredients:
1 tbsp
olive oil
1
onion, finely chopped
2
cloves of garlic, finely chopped
1-2
red chillies, finely chopped (de-seeded)
1 x
28 oz can of chopped tomatoes
1/2 small fresh tomatoe
1 tsp
dried oregano
Salt &
freshly ground black pepper
2 tbsp
Italian (flat leaf) parsley, finely chopped or fresh basil leaves, torn
1/2 fresh mozzarella, cut or ripped into cubes
3 tbsp
parmesan cheese, finely grated
drizzle
of extra virgin olive oil
Directions:
Preheat the oven to 350 degrees. Heat
the oil in a large pan or frying pan then add the onion and cook,
stirring, for roughly 8 minutes until softened. Add
the garlic and ¾ of the chilli and cook for another minute before adding the can of tomatoes. I added half of a fresh chopped tomato as well. Once mixed, add the oregano, salt and pepper.
Leave to simmer for about 30 minutes, adding a little
water if need be. Taste to check the
seasoning and adjust if necessary.
When
the sauce is almost ready bring a large pan of slightly salted water
to the boil and cook the gnocchi as per the packet instructions. Drain the gnocchi, saving a
little of the cooking water and add that to the sauce with a good drizzle
of extra virgin olive oil, the mozzarella and ¾ of the parsley
or basil. Once it is all properly mixed together and the gnocchi is
all evenly coated transfer it to one large serving dish. Top with some more mozzarella (eye ball it), chilli and the parmesan cheese then put in the oven until bubbling
and golden. I did for about 25-30 minutes, but you will need to eye ball it. Drizzle with a little extra virgin olive oil then
sprinkle over the remaining parsley (or basil). Serve and enjoy with a side salad for the perfect dinner.

So Chase and I went to Six Flags a few weeks ago and decided to take photos. I'm so glad we did because we had the best time and now we can look back and remember that fun day. You see, we made a rule a while back that no phones or cameras were allowed on dates or must be left in the car. Personally, we found that it helps us to actually listen to each other and focus on building our relationship rather than checking our phone every five seconds out of habit for the latest instagrams or sports update. I always thought that I was good at multi-tasking and could still listen to people while on my phone. But no, I cannot. It just doesn't work that way. Half listening or always saying, "Wait what," isn't good enough, especially when it comes to my husband whom I cherish over everything. I know, our world is sickening. Our phones may as well be another appendage. Phone five anyone?
Besides that rant, Chase threw a cute little diddy together of our day at Six Flags. We went on an evening where it was closed down for Triple A customers so the park wasn't crowded at all and we hit up about 13 roller coasters in a row under four hours. I blacked out a few times and pretty much went silent after about five roller coasters. My head ached, my tummy was turning, and I lost my appetite and desire to speak haha. I literally wanted to puke. I almost did but had to put up a mental block to stop myself by focusing on one object in front of me. If I would have let it go, it would have been all over myself and in my lap due to the position I was in on that particular ride. Ugh, I survived. Had I not been hanging from a ride that took forever to go in, I would be sharing another story here haha. BUT, let's not be dismayed. I had a great time and still love amusement parks. I just have a limit I have to listen to since I'm a girl who gets motion sick. This time I just let myself go so Chase could fill his amusement park heart desires :). Oh the things a wife does for her husband ;).
Every weekend Chase and I find a new adventure to go on. Whether it's a new beach, new town, or new place to eat, we like to see what's in our area. This past weekend we decided the perfect date would be a lunch date. We don't go on these too often anymore since we left Hawaii, so I thought it would be fun to start up again.
Oceanside is just 15 minutes from where we live, so we decided to head on over there for some beach time and a delicious lunch. The weather is warming up and I was finally able to take off my cover up and not shiver to death, yayyyy! And I absolutely looooveeee Ruby's shakes and eating on piers is fun, so we were sure to hit that up.
